Low FODMAP Pulled Jackfruit

Ingredients
  

  • 2 x 400 g tinned young jackfruit, drained
  • 400 g tinned chopped tomatoes
  • 3 tablespoon smoked paprika
  • 1 teaspoon salt
  • 2 teaspoon black pepper
  • 1 teaspoon dried mixed herbs
  • ½ cup maple syrup
  • ¼ cup red wine vinegar

Instructions
 

  • Put all the ingredients into a large saucepan.
  • Simmer for 20-30 minutes, stirring regularly, and using a wooden spoon to break up the jackfruit.
  • Serve with your favourite trimmings!
